Our steak is cooked exclusively over a charcoal and wood fire, just as tradition demands. The method is precise: a blazing hot grill set low over the embers, 5–8 minutes per side, then 15 minutes standing on the bone. No salt during cooking, only a touch of Tuscan extra virgin olive oil at the moment of serving.
The result is a steak that’s juicy, crisp on the outside, and tender within.
